Iriko" dashi miso soup from Kujuku Islands

Sasebo is a port town, with an abundance of seafood caught in the surrounding seas. Our miso soup is made with iriko (dried sardines) every morning, with a daily rotation of ingredients, served hot and fresh by our staff. A bowl of miso soup is a source of energy for the day.

A specialty of the Hirado region, Subo Kamaboko's rich flavor and texture is the best in the world,

Subo Kamaboko, a kind of fish cake wrapped in straws, is a specialty of the Hirado region of Nagasaki Prefecture. It has a rich fish flavor and a texture similar to tsukune (finely minced chicken meatballs). It is best eaten as is, without any seasoning. Incidentally, the word "Subo" comes from Japanese word "mugi-subo," an old term for wheat straw, which was traditionally used in place of the plastic straws used today.
