Presenting Hiroshima’s delicious specialty: fried oysters!
Oysters raised in Hiroshima Prefecture absorb an abundance of nutrients from the deep sea, giving them a plump, firm texture and a rich, savory flavor.
Fried oysters made with these oysters are crispy on the outside and juicy on the inside. Be sure to try them at least once to experience the freshness and quality unique to Hiroshima.
It’s a dish you can’t find anywhere else—one that truly embodies the pride of Hiroshima!

Buffet Menu (How to Cook Okonomiyaki)
As we resume serving okonomiyaki, to ensure that it is more delicious than ever, we enlisted the help of an Okonomiyaki Master Coordinator from Otafuku Sauce Co., Ltd., who provided a lecture on traditional cooking techniques.
The okonomiyaki beloved in Hiroshima is made using the “layered cooking” method, in which the batter, vegetables, and noodles are layered separately and grilled. Since this method requires skilled techniques, such as adjusting the heat and shaping the dish, we received detailed instructions starting from the very basics.
We invite you to enjoy this Hiroshima specialty, prepared by our hotel chefs who have honed their skills to perfection.

Nikujaga
Think of Kure, and nikujaga immediately comes to mind. Located in the southwestern part of Hiroshima Prefecture, Kure City has served as a military port since the Meiji era. It is said that this dish of simmered beef and potatoes, originated when Heihachiro Togo, while serving at the Kure Naval Base, had his troops prepare a dish inspired by beef stew to serve as their meals. The ingredients and preparation method have been passed down to this day.
Gansu
This Hiroshima specialty is made by mixing vegetables and chili flakes into fish paste, coating it in breadcrumbs, and deep-frying it. The sweetness of the vegetables leaves you wanting more.
French Toast
Our French toast is inspired by the traditional French method of soaking a baguette overnight
We add “Hiroshima lemons” to the head chef’s special batter (a mixture of milk and eggs) to give it a refreshing flavor that spreads across your palate when you take a bite. It’s delicious on its own or drizzled with maple syrup.
